The Mature coconut is when the area surrounding the cap is green and the coconut is 10 to 12 months old, it is regarded as mature. At matuarity the skin begins to change from green to yellow and then to brown, and "rat-tail" is entirely brown. A gray skin indicates that the nut is old.

COOKED COCONUT PASTE
Coconut paste is a product made from the whole coconut, not just the fat itself. Therefore, it is used as an addition to dishes. Coconut paste is not suitable for frying. The difference between them can be likened to peanut butter and peanut oil.
Kerisik is made with freshly grated coconut that is toasted dry until aromatic and golden brown. If you just lightly pound the toasted coconut to release some aroma and just a bit of oil, the texture will be drier. If you pound the toasted coconut with mortar and pestle further until the coconut releases oil and turn into an oily paste, almost like coconut butter, this kerisik paste is often used to chicken rendang such as this rendang ayam perak and curry dishes.
Young Coconut
A young or green coconut is an immature coconut, which is harvested before it is fully grown. It is also known as ivory coconut, tender coconut, and green coconut that totally depends on the regoin from where they are picked.
The young coconut are high in nutrition and are a great source of calcium, carbohydrates, iron, and dietary fibre. In additioon, the water or milk inside the meat is itself a high source of electrolytes. In fact, these coconuts have water. Since these coconuts are young , they contain fewer calories than the old coconuts. The young coconut meat usually contains about 140 calories and the coconut water contain 18 calories. The young coconut has immense benefits and uses and mostly it is cherished for its water.
